Mix wet and dry ingredients separately.

Combine wet and dry ingredients.

Add 1 ½ cups of shredded or finely chopped carrots or broccoli to the mix.

The mix will be heavy and stiff. Do not add liquid or it won't rise properly.

Spray a 9x13 inch pan with Pam Cooking Spray, put the dough in the pan and bake for about 30 minutes (check for doneness) in a 400 degree pre-heated oven.

Cool on a rack, cut into squares and freeze in single layer in gallon size plastic baggies.

Thaw covered squares of the cornbread in the microwave when ready to serve.
